Marsh samphire, also know as glasswort and sometimes called sea asparagus, as its shoots are similar to small asparagus.
Samphire grows easily and is commonly found all over Europe and North America, it is not cultivated and is only available for a short time while in season. It has a distinctly salty, iodine flavour with a pleasant crisp texture. The flavour is reminiscent of the sea and goes particularly well with fish and seafood. Simply steamed and dipped into melted butter.
To prepare, simply rinse under cold running water, steam over boling water for 3 minutes. Otherwise blanch in boiling water for 3-5 minutes and drain.
