A wonderful fish which may be cooked whole - either baked in foil with a melee of fresh herbs, or simply poached makes a feast. The bones of the fish make the gelatinous stock, the basis for so many sauces.
We would recommend a 800g to 1 kg fish for 2 people, which we can fillet or leave whole.
